Not Today, Rosé—This Is the *It* Wine of Summer 2025

At first, I almost dismissed it as a gimmick: White Malbec? Could that really be a thing? Is this just a new grape—or blend—with a marketing rebrand?!

Traditional Malbec has such plummy notes and a full body that I couldn’t imagine a light, summertime version. It seemed counterintuitive. But it’s legit: Those very same red grapes are picked much earlier in the season and pressed immediately, per South America Wine Guide, which causes a higher acidity and creates a clear juice, since there’s little-to-no skin contact during the process.

Though there’s some debate as to who invented white Malbec, Argentinian winemaker Trivento is arguably the industry leader. The brand has been testing and refining its white Malbec since 2018, and Forbes reports that as demand has grown, so have the number of cases Trivento produces, with more than five times its initial output in just five years. (A Trivento rep confirmed that number is steadily rising, expected to reach 240,000 cases a year by 2030, up from the initial 30,000-case run.) Demand has clearly climbed as the word has spread, and after taking a sip, I see why.

The wine itself is perplexing at first pour. It’s so clear that it’s almost silvery, like vodka. Put it in a drinking glass, and you’d mistake it for water. (In addition to softly crushing its grapes and immediately destemming and pressing them to prevent pigment from being extracted, Trivento also ferments its white Malbec in stainless steel tanks for 15 days at 50 degrees F, before filtering, clarifying and stabilizing it.)

What Does White Malbec Taste Like?

The aroma is light, but even more so is the flavor. You get notes of green apple and raspberry, instead of the dark berry and plummy notes typically associated with Malbec. It’s crisp and refreshing, with a slightly mouth-watering finish, but by no means overpowering. A fellow reviewer described it as a “refined wine cooler,” and the association stuck—it’s a less-intense wine that can appeal to a wide range of people, making it great to serve at a cookout or alfresco dinner party. (Plus, it pairs nicely with chicken, fish and seafood. It’d be great served with a skillet paella or this sheet pan roast chicken, though it’s easily sippable on its own.)

What Is a Hugo Spritz?

According to Wine Enthusiast, South Tyrol-based bartender Roland Gruber dreamed up the concoction in 2005 by combining prosecco, lemon balm syrup and mint leaves. Lemon balm, a sweet, citrus-y herb, was later traded for elderflower. Since elderberry plants can be tough to source, most mixologists substitute elderflower liqueur, namely St-Germain.

Compared to its zippy Aperol cousin, the Hugo spritz is less bitter and lower in alcohol. The liqueur has a semisweet, botanical profile that pairs well with the crisp, dry wine. But of course, cocktails are endlessly riffable, so you can use any sparkling vino you’d like. (Cava and Champagne are fair game, but I’m partial to sparkling rosé—more on that below.) You can also use lemon or lime as a garnish, skip or double down on the fresh mint and use more or less of the elderflower liqueur to match your preferences.

This may be TMI, but I have some undies that I’ve been wearing for way too many years now, and the lace is falling apart, so Underclub has been a lifesaver, revamping my undies drawer. For the last 40-plus years, the Oscar-winner has been hard at work restoring the estate to its former pre-prohibition glory, even being honored with a Wine Enthusiast Wine Star Lifetime Achievement Award in 2019 for his efforts. His influence can be felt throughout the property, from the movie memorabilia museum that can be be found inside the Inglenook Chateau to the film set-like lawn, which features a gorgeous reflection pool and iconic fountains that look like something out of Sofia Coppola’s Marie Antoinette. 8. V. Sattui

This is one of the Valley’s best-hidden gems (literally—it’s buried in a cave in the hillside and is only visible from above.) Needless to say, it’s ultra-private, and by appointment only. Once you’re in the underground tasting room, however, you’ll be treated to several limited edition red blends from Julian Fayard, a French-born winemaker that’s widely lauded as one of Napa Valley’s finest.

Surprise! We saved the best for last. Dario Sattui wasn’t quite content to simply revel in his family’s legacy after rebuilding V. You can’t fake something like this. You either do it right or people will know it’s not authentic,” he explained on the winery’s website. Authentic, it most certainly is—this baby, which took a whopping 15 years to build, has 107 rooms, a moat, a drawbridge (is your jaw on the floor yet?) stables, an armory and even (gulp!) a torture chamber. Luckily, guests are in for a more pleasurable experience, thanks to the celebrated wine collection that’s tucked away in its vaulted cellars.

You may not know that 95 percent of Napa Valley wineries are still family-owned and boutique, producing less than 10,000 cases a year. Some wineries are so small or off-the-beaten-track that they need to know when you are coming so someone will be there to greet you. Heck, it might even be the winemaker themself.

There’s always something fun happening at the Hawk Haven Vineyard. Since opening its doors in 2008, it has delivered a variety of wines and activities, plus a healthy dose of local pride. Daily you’ll find an event for the wine lover, foodie or music aficionado. In particular, The Rootstock concert series bridges all those together every weekend with local musicians, ever-changing food trucks (and their priceless wines of course) and exclusively to adults only (so leave the kiddos at home). But if you’re looking to mellow out, reserve a spot to learn all about the vineyard, wine selection and local farm.

FYI, this is not your average winery. Yes, you can head to the Hammonton area to check out their vineyard but why limit yourself to one spot in the Garden State? If you’re interested in trying one of their 50+ wines, their tasting room is scattered across ten locations in the state. Once you head over to one, there you can choose from their signature (which has five samplings) or Riedel (which has eight samplings and a souvenir glass) tastings. How would it be to visit all ten, we wonder?

Plus, you don’t want to miss out on all the activities they offer—from art exhibitions to yoga in the vineyard.

Plus, the space alone (featuring stone patios, large barn doors and a front-row seat of the sunset) is enough to make the trip.
