What Is White Chocolate? Two Experts Weigh In

There was a time when I hated white chocolate.

As a bona fide dark chocolate enthusiast who preferred the rich flavor notes of cocoa, I often steered clear of the white variety. Not just because of the high sugar content, but also because I felt like they were missing the very thing that makes chocolate so delicious: the actual cocoa bean.

Naturally, when I attended chocolate-making classes, one of my go-to questions for the instructor was: What is white chocolate, exactly? After learning a few details about how it’s made, I proceeded to educate my friends about why some of their favorite white chocolate is not real chocolate. (Yes, I was one of those people.) But then, a few years ago, I tasted the most velvety, buttery white chocolate—with notes of cocoa!—and my world was rocked.

I had to know: How is it that some white chocolates have the flavor of cocoa and others don’t? And more importantly, is white chocolate considered real chocolate? I enlisted the help of two experts to get to the bottom of this.

MEET THE EXPERTS:

What Is White Chocolate?

Getty Images

White chocolate is primarily made up of three ingredients. “All you really have is cocoa butter, milk powder and sugar,” said Sylvester, who’s been making chocolate for seven years. “The cocoa butter comes from the cocoa bean, so you can technically call it chocolate, but the reality is that the real cocoa has been squeezed out of the cocoa bean.”

Cocoa butter is the ingredient that gives the chocolate its creamy texture, while milk solids and sugar are added for taste. Many brands will also include vanilla and lecithin, a fatty food additive that serves as an emulsifier.

What Percentage of Cocoa Butter Is Needed to Make White Chocolate?

According to the U.S. Food & Drug Administration, white chocolate must contain a minimum of 20 percent cocoa butter. It should also have a minimum of 14 percent milk solids and at least 3.5 percent milkfat.

How Is White Chocolate Made?

Getty Images

The process is quite similar to making a milk chocolate bar, except after the cacao beans are roasted, cracked and winnowed, the cocoa butter is pressed out of the nibs and used to create the final product without the cocoa solids. The butter is mixed with sugar, milk solids and vanilla in a conche machine or melanger to refine the texture and create the desired smoothness and flavor. Then, the mixture is tempered and poured into molds to become solid chocolate.

(FYI, you’re likely wondering who invented white chocolate. That credit goes to the Nestlé company, which started producing white chocolate commercially in 1936 as a way to utilize extra milk powder and cocoa butter.)

Is White Chocolate Real Chocolate?

The short answer? It depends on how you define it. Some chocolate makers will tell you that white chocolate is not real chocolate because it doesn’t contain any cocoa solids—the part of the cocoa bean that remains after the butter has been extracted. The remains of the bean are what give dark and milk chocolate their color and flavor, and some experts consider this a key component in chocolate bars. Meanwhile, the absence of these cocoa solids in white chocolate results in a much paler color and a different flavor profile.

Sylvester explains, “Most people call it chocolate, but it’s really candy because it’s just the fat. There’s a very small percentage, I think it’s 12 to 15 percent, of cocoa from that butter.”

Still, some experts, including Corpuz, would call this real chocolate because cocoa fat is technically a cocoa product. He says, “White chocolate is definitely chocolate. The reason why is, at the end of the day, when we create chocolate, there will always be a percentage attached to it, and what that percentage indicates is the amount of cocoa product in the set chocolate. For example, what we’re using is white chocolate 32 percent, [meaning] 32 percent straight cocoa butter.”

What Is the Actual Flavor of White Chocolate?

Getty Images

Corpuz says, “White chocolate has a milkier, sweeter flavor profile [compared to milk and dark chocolate]. It usually already has a vanilla, straightforward flavor, and that’s because the flavor of chocolate has been deodorized or taken out of the cocoa butter.”

The chocolatier also noted that when the fat doesn’t go through deodorization (a steam distillation process that eliminates the natural cocoa aroma), it has a huge impact on the chocolate’s taste. He said, “When we extract cocoa butter, that residual flavor of chocolate usually stays with the fat. Some companies, like the Philippine company that we’re using, don’t deodorize their cocoa butter, so their white chocolate actually has the flavor of chocolate.”

Corpuz continued, “Think of it like white sugar. One step of refining becomes dark brown sugar. When we take a second step, it becomes light brown sugar, and then another step would be white sugar. It’s a very simplified version. So this idea of when we refine or extract cocoa butter, it’s in that dark brown sugar phase where it still has some flavor, and as it gets deodorized, it now becomes like light brown sugar, it has less flavor.”

What Flavor Notes Pair Well with White Chocolate?

There’s a reason you can’t resist those white chocolate macadamia nut cookies. According to Corpuz, white chocolate pairs best with lighter flavors that complement the sweet, milky taste, rather than overpower it.

“A lot of flavors that go well with chocolate are subtle flavors,” Corpuz said. “For example, we have the Hojicha Tea bonbon. Hojicha is roasted green tea from Japan. It has this very roasty, nutty flavor profile that, if we paired that with dark chocolate, it would sometimes compete so much that the flavor of the chocolate overpowers it. So when it comes to pairing, it has to be a distinct flavor, but one that won’t be overshadowed. Lighter flavors, like teas, go well with white chocolate.”

PureWow’s former Senior Food Editor, Katherine Gillen, also recommends pairing the sweet and creamy chocolate with tart fruit for a satisfying flavor contrast. (Like this raspberry white chocolate bûche de noël or key lime pie with coconut and white chocolate.)

Meghan Markle Wore Five-Inch Stilettos While Pregnant with Archie—and Now She’s Ready to Talk About It

Meghan Markle has ended the first season of her podcast, Confessions of a Female Founder, with a bang.

On one of the final episodes of the Lemonada Media podcast, the Duchess of Sussex chatted with Spanx founder Sara Blakely about female entrepreneurship, financial literacy and her experience with both of her pregnancies. You might recall previous episodes where the royal got candid about the biggest challenges of motherhood, including her battle with postpartum preeclampsia. This time, however, Markle reflected on her sartorial choices while carrying her son, Archie (6), and her daughter, Lilibet (3).

As the duo discussed footwear, Markle recalled how she often donned high heels while she was with child—even though she had “gained 65 pounds with both pregnancies.” She said, “A friend just said to me the other day, they were like, ‘I just saw this picture, I’d forgotten about when you were so pregnant with Archie.’”

Karwai Tang/WireImage

Apparently, her friend was quite shocked by the Suits alum’s choice of footwear, but the baby bump and extra weight didn’t deter Markle from stepping out in chic stilettos for royal outings.

She added, “I always wear my five-inch, pointy-toed stilettos. They’re like, ‘You have the most enormous bump and your tiny little ankles are bracing themselves in these high heels,’ but all my weight was in the front. So you’re just going, how on Earth am I not just tipping, you know, face planting?”

Fortunately, Markle has her husband to thank. She added, “I was clinging very closely to my husband, like, ‘Please don’t let me fall.’”

Karwai Tang/WireImage

Although Markle kept her second pregnancy private, several pics were captured of the former actress as a senior member of the royal family while she was pregnant with Archie. Among her most memorable maternity looks is her printed Victoria Beckham dress from the Commonwealth Day service in 2019. She paired the number with a textured white coat and green pumps.

The duchess gave birth to Archie in May 2019, and the young prince became a big brother after Markle welcomed her second child, Lilibet, in June 2021.

The entrepreneur occasionally offers glimpses of the red-haired siblings on her Instagram feed, including sweet birthday shoutouts and anniversary tributes. Most recently, she celebrated seven years of marriage to Harry with a collage of photos that featured both children. She wrote, “Thanks to all of you (whether by our side, or from afar) who have loved and supported us throughout our love story—we appreciate you.”

I Watched the #7 Movie on Netflix & I Think Its Rotten Tomatoes Score Should Be Way Higher

Although it has been nearly a month since Nonnas dropped on Netflix, the heartwarming biopic still sits comfortably on the streaming service’s top ten list. After soaring to the top spot shortly after its premiere, the film has since made its way to the seventh spot, outranking popular titles like Home and Havoc.

I was surprised to see this title pop up among Netflix’s trending movies for three consecutive weeks, and so, of course, my curiosity got the best of me. I saw that the film has 81 percent on Rotten Tomatoes, then I caught a glimpse of one hilarious kitchen scene between three grandmothers and I was intrigued enough to start watching. By the time the credits rolled, I finally understood why fans find this tale so compelling. (And no, I’m not just talking about the mouth-watering Italian food.)

https://www.youtube.com/embed/rDJxJd3FzDY?si=g28oKNWTPRQadR31

If you’re unfamiliar with the plot, Nonnas is based on the true story of Joe Scaravella, who was inspired to open a restaurant after his grandmother passed away in 1999. In the film, Vince Vaughn portrays Joe, who honors his late mother and grandmother by opening up an old-school Italian restaurant called Enoteca Maria. The best part? Their menu is filled with generations-old recipes prepared by four Italian grandmothers (or nonnas).

The film does a fantastic job of highlighting the importance of family traditions and how food can bring people together. It beautifully explores themes of loss and grief, and Joe’s determination to get his new business off the ground was incredibly inspiring. Still, these factors paled in comparison to the four grandmas, who were the true stars.

Lorraine Bracco (Roberta), Brenda Vaccaro (Antonella), Talia Shire (Teresa) and Susan Sarandon (Gia) star as the fabulous chefs who share their tasty dishes with the neighborhood, but there’s more to them than their impressive culinary skills. They’re multi-dimensional, well-rounded characters with complicated pasts and uncertain futures. And not only that—they’re navigating a world that’s obsessed with youth.

Courtesy of Netflix

Fortunately, throughout the movie, these ladies forge an unlikely bond that begins with a fun makeup session at Gia’s salon. While there, they’re given the space to be transparent about their concerns and struggles, be it estranged children or lost loves. And thanks to a rousing speech from Gia, these ladies are reminded that they still have plenty to give this world, and it’s never too late to embark on exciting new adventures.

Now that is a key message I don’t see very often. Sure, the movie also has plenty to say about family. In fact, director Stephen Chbosky told Tudum, “The message is to love your family and honor your family’s past and traditions, however that love of family manifests itself, whether it’s for your family of origin or the family you choose.”

Still, what stood out for me was that these grandmas were filled with so much life, joy and spunk. I imagine any grandma who watches this would feel empowered to do what she loves and explore new paths.

You can now stream Nonnas on Netflix.

Nicole Kidman Speaks Out About Her Two Daughters Just Days After Releasing Surprise Photo of Them

On Hulu’s Nine Perfect Strangers, Nicole Kidman is a mysterious wellness guru who tries to heal after losing her daughter. But behind the cameras, the actress is getting candid about being a real-life mom.

In a recent interview with Allure, the 57-year-old actress discussed her relationship with her two teenage daughters, Sunday Rose, 16, and Faith Margaret, 14, whom she shares with her husband, Keith Urban. When asked if she likes the mother she has become, she said, “I do, actually. I’m very close to both my girls. I sit on their beds and discuss the most intimate things; I get to be their guide.”

The actress also mentioned that she genuinely enjoys their mother-daughter bond. She continued, “If they want to tell me to be quiet, they can. I’m able to apologize to them. I’m able to stand up to them. I very much like the relationship we have. It’s nice to be able to say that.”

In addition to Sunday Rose and Faith Margaret, Kidman has two adopted children (Isabella and Connor) from her previous marriage to Tom Cruise.

The cover interview comes just a few days after the Holland star paid tribute to her own mom on Mother’s Day. Kidman took to Instagram and shared a sweet throwback pic with her mother, Janelle, and both of her daughters during a family vacation in Australia.

Kidman captioned the post, “My mother and my daughters in Uluru, beautiful memories…always. Happy Mother’s Day.” In the comments, one fan wrote, “Gracefully beautiful photo of your mom.”

As it turns out, Kidman came quite close to leaving Hollywood for good after she welcomed both of her daughters. The actress told Motherly, “I’d moved to Nashville; we were living on a farm.” Fortunately, thanks to her mom, Kidman decided to stick around.

She recalled, “My mom actually said, ‘I wouldn’t give up completely. Keep a finger sort of in it.’”

Kudos to Janelle for steering her daughter in the right direction.

King Charles’s Body Language Spoke Volumes During His Visit to Canada

King Charles and Queen Camilla have officially touched down in Ottawa, Canada, marking His Majesty’s first visit to the nation after his coronation.

The royal couple received a warm welcome from the local community and have since met with Prime Minister Mark Carney and his wife, Diana Fox Carney. Buckingham Palace also took to Instagram to share memorable moments, including their visit to Lansdowne Park and Rideau Hall. As you’d expect, the king was in high spirits, but according to body language expert Darren Stanton, there was more to the monarch’s nonverbal gestures than met the eye.

Victoria Jones – Pool/Getty Images

Speaking on behalf of Betfair Slots, Stanton revealed that King Charles looked powerful and determined when he arrived yesterday. He explained, “It was clear from the crowds and the reaction of the public that everyone was elated over Charles and Camilla arriving. Charles also seemed really pleased to be visiting. His posture was upright, straight, and he wasn’t slouching, showing that he was completely engaged in taking it all in.”

He continued, “In terms of his facial expressions, Charles seemed genuinely happy to be there—there weren’t any signs of a fake or masking smile. The emotions, from a microexpression point of view, were very genuine. He certainly looked powerful while taking on the event. He’s got that strong determination that his mother had.”

The expert also called out a key gesture that spoke volumes about the king’s relationship with Carney when they greeted each other.

Victoria Jones – Pool/Getty Images

“Looking at the pictures of Charles and Canada’s Prime Minister Mark Carney, the feelings were very much reciprocated by him,” Stanton said. “There is clearly a real, deep mutual respect between these two men. When you look at their handshake, it’s a really good, firm grip. I also noticed that Carney put both of his hands over Charles’ at one point, which is referred to as a double handshake. This shows that he has the utmost respect for the King.”

“Overall, Charles appeared in really good spirits. It was all very positive, with great postures and eye contact. Both him and the Queen seem really strong in their character and general demeanor.”

Today, the king is set to make history by delivering the Speech from the Throne at the opening of parliament. This will be the first time in nearly five decades that Canada’s head of state gives the throne speech. (The last time this occurred was in October 1977, when Elizabeth II delivered it for the second time.)

Regarding the king’s visit, Carney said in a statement that it “clearly underscores the sovereignty of our country,” adding that His Majesty’s speech is “a historic honour that matches the weight of our times.”

Queen Camilla’s $50,000 Garden Party Accessory Has a Hidden Meaning

It’s no secret that Queen Camilla loves to wear meaningful accessories. Just a few weeks ago, I saw the queen wearing a delicate gold necklace that paid tribute to her grandchildren while visiting Northern Ireland. And during her visit to Italy last month, the royal was spotted in a $10 million brooch (yes, $10 million) that was frequently worn by the late Queen Elizabeth. Once again, Camilla has turned heads with another standout piece that holds a special meaning.

Earlier this month, Queen Camilla and her husband, King Charles, hosted 8,000 guests at Buckingham Palace for their first Garden Party of 2025. For the occasion, the queen donned a stunning dark teal dress with a matching wide-brimmed hat. However, it was her dazzling jewelry that stole the show.

Maxwell Stone, Creative Director at UK retailer Steven Stone, examined the queen’s brooch—an intricately designed piece that features a round-cut turquoise—and shared a bit about its royal history, as well as its secret meaning.

Yui Mok – WPA Pool/Getty Images

He said in a statement, “This historic brooch originally belonged to Queen Mary, who received it as a wedding gift from her in-laws in 1893. Like many treasured pieces in her collection, it was later passed down to Queen Elizabeth II.”

He continued, “At its centre lies a round-cut turquoise—a gemstone long associated with healing, peace, and protection. Although Queen Elizabeth II did not wear the brooch publicly until 2014, it took on particular significance when she chose it for her televised address to the nation during the COVID-19 pandemic in April 2020, a time of profound uncertainty.”

Peter Summers/Getty Images

The jewelry expert also explained that the standout piece may hold even more significance for Camilla, due to her husband’s recent health setbacks.

Stone said, “Queen Camilla’s decision to wear the brooch yesterday may have conveyed a deeper symbolic message—one of resilience, continuity, and quiet strength. When she wore it in June 2024, both King Charles and the Princess of Wales were in recovery from cancer treatment, and the nation was preparing for a pivotal general election.”

As for the brooch’s value? Stone estimates that it’s worth at least £40,000 (which is approximately $50,800).

In addition to the king and queen, other royal family members attended the garden party, including Duchess Sophie, Prince Edward and Princess Anne. Buckingham Palace shared a recap video of the evening and wrote, “Their Majesties, joined by Members of The Royal Family, met guests who have travelled from across the country to attend. Guests are nominated by charities and organisations with Royal links, and are invited as a ‘thank you’ for their public service.”

King Charles Is Headed to North America—But Will He Meet with Son Prince Harry?

Prince Harry has made countless headlines after stepping down as a senior royal, from his controversial memoir and legal battle over security to his tell-all interview with the BBC. The royal has since been candid about how these events led to a rift with his family, especially his father, King Charles. But now that the monarch is planning a visit to North America, royal fans can’t help but wonder if the father-son duo will have an opportunity to reconnect.

On Instagram, His Majesty and Queen Camilla announced that they will travel across the pond next week for a visit to Canada, which means they will briefly be on the same continent as Harry, who currently resides in California with his family. Given that the two haven’t seen each other in over a year, could this mean that King Charles will make time to check in on his son?

According to PureWow’s resident royal expert, Rachel Bowie, it’s very unlikely.

Samir Hussein/Samir Hussein/WireImage

“I think it’s highly doubtful we’ll see King Charles reunite with Prince Harry during his visit to Canada this month,” Bowie said. “For one thing, Ottawa is thousands of miles from Montecito—if the pair couldn’t coordinate a meet-up while Harry was in London for recent events like the WellChild Awards or the 10-year anniversary of the Invictus Games, both last year, I don’t see this being the moment where they finally have a chance to reconnect.”

Referencing Prince Harry’s emotional remarks during his chat with BBC, she added, “Harry’s BBC interview is still very much top of mind for the world, but I’m sure especially for Charles. Harry wants a royal reconciliation, but for Charles, there’s a continued lack of trust. I’d be thrilled to see them figure out a way to meet—and Canada would be the perfect neutral ground—but given the brevity of the king and queen’s trip and everything else we know, I think it’s very unlikely.”

In case you need a refresher on the recorded interview, the duke opened up about his strained relationship with the king and discussed his desire to reconcile.

https://www.youtube.com/embed/m1eUXtSbJUE?si=cg9RhZh8Y9KvHWr4

Harry said, “I would love reconciliation with my family. There’s no point in continuing to fight anymore. Life is precious. I don’t know how much longer my father has. He won’t speak to me because of this security stuff, but it would be nice to reconcile.”

While the prince has been candid about the state of their relationship in past interviews, King Charles has not addressed this publicly.

It may feel like a stretch to predict a happy reunion between the two royals in North America, but here’s hoping this painful rift doesn’t stretch on for much longer.

Kate Middleton’s Facial Expressions Were Prince Louis-Level at Yesterday’s Outing

Prince Louis has won the hearts of royal fans with his cheeky moments and meme-worthy expressions at several public events. For instance, during his grandad’s coronation ceremony in 2023, he stole the show with his silly antics. Then, during last year’s Trooping the Colour, he showed off his dance moves and made funny faces while joining his family on the palace balcony. Once again, the young royal entertained fans with his playful personality when he attended the 80th anniversary of Victory in Europe Day. And now, his mom is following suit.

This week, Princess Catherine joined her husband, Prince William, at the official naming ceremony of the HMS Glasgow. On Instagram, the couple shared highlights from the event and wrote, “Everything is looking ship shape! A pleasure to meet with members of the Ship’s Company and their families, as well as BAE Systems’ Shipbuilding Academy apprentices and graduates, and some of the incredibly skillful teams involved in the building of the ship.”

Per usual, the princess looked stunning in her navy and white ensemble, but I couldn’t help but notice that she was much more expressive during the royal outing.

For example, after boarding the ship, the princess was quite animated as she spoke with team members, using hand gestures and speaking with raised eyebrows. Also, in one standout photo, the princess is captured in the middle of a friendly pipe-building competition with her husband.

Towards the end, when the royal mom is declared the winner, her piece begins to fall apart—and her facial expression is priceless.

Middleton is also pictured bursting into laughter after her husband teases, “Perfectly timed,” from across the table.

The royal’s enthusiasm instantly made me think of Prince Louis’s many candid moments with the family, and I’m beginning to see where he gets his cheeky expressions from.

Samir Hussein/WireImage

It looks like the proud mom passed down more than just her love of photography. Perhaps this means we’ll see more meme-worthy snaps of the mother-son duo together? (I certainly hope so.)
